INGREDIENTS (Makes 12 Cookies)
1/4 cup melted organic Butter
1/3 Cup Maple Syrup
1 tablespoon lemon zest
1 1/2 teaspoons lemon extract
1 1/3 cups Blanched Almond Flour
2 tablespoons Coconut Flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1 tsp. Vanilla
DIRECTIONS
In a large mixing bowl, mix together all the Ingredients.
- Preheat the oven to 350°F and line a baking sheet with a piece of parchment paper
- Scoop cookies onto baking sheet and flatten with a fork for that look you want.
- Bake for 11-15 min depending how crunchy you like them . 13 min was perfect for me when they turn light brown.
- The cookies will still be very soft when you remove them from the oven. Let them cool on the pan completely.
I love how tender and lemony these cookies are! They are a favorite treat of mine.
