INGREDIENTS
(serves 2-3)
1 Bag Organic Cauliflower rice (Trader Joe’s or other healh food stores)
2 Organic Chicken breasts cut up (cooked)
Shredded Organic carrots
Organic Cucumbers (sliced)
Organic Cherry tomatoes
Olive oil
Garlic salt
Teriyaki Coconut Aminos
Cilantro (I didn’t have any, but would be good!)
Any veggies you have on hand (onions, mushrooms, etc)
DIRECTIONS
Pour 1-2 tbsp. olive oil in cast iron pan. Sauté cauliflower crumbles, add garlic salt and coconut aminos. Sauté for 1-2 minutes. Add veggies and chicken. Add extra sauce on top if desired.
**If you can’t find the rice, you can take a head of Cauliflower and cut it up and place in food processor to make crumbles.
So delish! The teriyaki aminos make this dish AND we didn’t miss the rice. I will definitely make this again.
This dish was not only easy to make, but super yummy!! Although, the store didn’t have just cauliflower rice they only had cauliflower and sweet potato rice mix. Which made this dish just as delicious.
