INGREDIENTS
(serves 4)
4 cups Quinoa Pasta (traders joes one without corn)
Cilantro Pesto (see below)
Baked Organic Chicken: 2 large breasts sliced up
Pinenuts
Tomatoes (optional)
CILANTRO PESTO
4 cloves garlic
1/3 cup Brazil nuts
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
2 cups packed fresh cilantro
4 tbsp. lemon juice
2 tbsp. organic extra virgin olive oil
2/3 cup flaxseed oil or Avocado oil
Sea salt to taste
DIRECTIONS
Mix in blender…
Boil pasta until aldente.
Add pesto, chicken, and tomatoes to dish. Serve hot and enjoy!
