FUDGE
2 overripe bananas, mashed
1 cup Peanut butter or cashew butter (can sub for another nut butter or nut free alternative)
Enjoy chocolate chips (as much as you want)
1/4 cup coconut oil
Cinnamon (optional)
1 tsp. vanilla extract
1-2 tsp. maple syrup (optional)
DIRECTIONS
Line a 12 count muffin tray with muffin liners and set aside.
- In a large mixing bowl, add your mashed bananas and set aside.
- In a microwave safe bowl or stovetop, melt your coconut oil with your nut butter. Pour into the mixing bowl and stir through the mashed banana until fully incorporated. Add the rest of the ingredients.
- Divide mixture amongst muffin tins and stick in freezer to firm up before serving. Store in freezer.
These are so good! I like grabbing one out of the freezer when I feel the urge to snack and it satisfies me for quite awhile!
Just made these tonight and they were sooo delicious!!! I substituted the peanut butter for sunflower butter and I added chia seeds! They were also such a hit with my 11mo old! Made my night!! Thanks for posting such a quick easy and yummy snack!
