(serves 4)

1-1/2 lbs. Grass-fed beef

1 Tbsp. Olive Oil

1/2 cup chopped onions

2-3 garlic cloves minced

2 celery stalks chopped

2 tsp. Thyme

2 tsp. Cumin

Garlic salt as needed

2 cans diced organic tomatoes

1 can organic salsa 

Cilantro (optional)

Raw cheese (optional)


In a large skillet, brown grass-fed beef. In a smaller skillet, add olive oil and  sauté garlic, onion and celery until lightly brown. Add seasoning to beef, add garlic, onion and celery to meat. Add salsa and tomatoes as well. Bring to a boil, then bring down to a simmer for at least 20 minutes to an hour. 

I love to add raw cheese on top, avocado, or whatever sounds good to you!
