INGREDIENTS
3 med. ripe bananas, frozen and cut into 1-inch pieces
1 tsp. vanilla extract
7 oz Enjoy Chocolate chips
1/4 cup coconut oil
pinch of salt
3 tbls. almonds or walnuts, toasted and finely chopped or walnuts (optional)
DIRECTIONS
First you make the banana ice cream. Toss the frozen banana chunks and vanilla into blender or food processor.
Blitz until creamy
Transfer the ice cream to an airtight container and freeze overnight or until frozen
Once your ice cream is frozen, scoop out with ice cream scooper onto wax paper on a tray..make into balls that look like bon-bons.
Work quickly so it they don’t melt!
For Chocolate:
Throw the chocolate, coconut oil and salt in heat proof bowl
You can melt on double boiler or microwave like I did!
Stab the icecream with a stick and dip the bon bons in chocolate and nuts if you want
Place in freezer until frozen again and enjoy!!!
