INGREDIENTS (SERVES 4-6)

For chicken salad:

4 breasts Organic chicken cut in pieces 

1/4 cup Craisins

1/4 cup raw cashews

1/2 cup or more Primal kitchen mayo (on amazon or thrive)

2 -4 Stalks  organic celery cut in pieces

6  organic grapes sliced

salt/pepper to taste

Avocado (optional)

Organic tomatoes (optional)

Spinach

Organic sprouted bread or gluten free

DIRECTIONS

Cut up chicken breast into little pieces. 

Add all ingredients with mayo to mixture and stir, mashing a bit to make chicken salad.

Season with salt and pepper to taste

Place on avocado, sandwich or spinach salad.
