INGREDIENTS (SERVES 6)
I lb. ground turkey or grass fed beef
1 can drained organic kidney beans
1 can organic corn, or roasted corn
1 can crushed organic tomatoes
Garlic salt as needed
2 cups of water
OPTIONAL Taco seasoning: 2 tsp. chili pepper, 1/2tsp. paprika, 1 tsp. onion powder, 1/2 tsp sea salt, 1/2 tsp ground cumin, 1/2 tsp oregano, 1/2 tsp garlic powder, red pepper flakes(optional)
TOPPINGS (optional)
Raw Cheese
Sour cream
Serve with organic corn chips
DIRECTIONS
Fry up meat, add all ingredients, mix and serve hot. Put toppings in separate bowl and serve on the side.
*If you do not have time to make seasoning, some garlic salt and added ingredients is all you need and it still tastes great!
This taco soup is delicious and so quick and easy to make. What a nice treat for dinner or lunch!

I made this recipe tonight for dinner and my whole family loved it! My three kids usually don’t like food too sauced or spicy, but I made and added the seasoning mix, and they all agreed it was great! I doubled the recipe, so had to modify a little. (I only had one can of kidney beans, so I added pinto beans too; I used fresh corn off the cob, and used organic diced tomatoes.) I only added about one cup of water, so it was more of a chili than a soup, but we ate it with shredded cheese, sliced olives, and Late July’s multigrain tortilla chips. It was a huge hit! Always a huge hit with my family! They all love this soup, even my pickiest eater! My kids are still warming up to spices, so the only modification I made was less chili powder. I added some carrots to the soup, because I had prepped them and had them handy, and it was delicious! Thanks, Debbie!
