- 4 large artichokes
- 2 large lemons
- Organic Extra-virgin olive oil
- Garlic Salt
- 1 stick salted butter, very soft (optional for dipping)
- Primal Kitchen Mayo
- Any Flavored Balsamic Vinegar
Boil a large pot of water..enough to accommodate the artichokes. (about 2 quarts). Add the slice lemons
Trim any dry stem end from the bottom of the artichoke and add artichokes to pot. Boil till soft enough to cut in half.
Cut in half and scoop the fuzzy choke from the center of each artichoke. Give the artichoke a good squeeze to release any water.
Drizzle artichoke with olive oil and season with garlic salt. Drizzle the vinegar on top.
Place artichokes face down on BBQ or hot cast iron pan till crispy and hot.
Serve the artichokes with the butter or mayo.
