INGREDIENTS
1 medium zucchini shredded
6 pastured organic eggs
1/2 cup coconut oil (melted)
1/3 cup raw honey
1 tsp. vanilla
1 tbsp. ground cinnamon
1/2 tbsp. pumpkin spice
1/2 tsp. sea salt
1 tsp. baking soda
1/2 cup organic coconut flour
1/3 cup pecans or walnuts (chopped) optional
DIRECTIONS
Preheat oven to 350 degrees. Shred zucchini skin off and chop into pieces. Combine all ingredients in mixing bowl. Mix and fold in nuts. Bake for about 40 minutes, or until toothpick comes out clean. Remove from pan to cool, then serve!! Of course slather it with butter and you will be a happy camper!! 🙂
