4 Ears of organic gmo free corn
10 Raw wild shrimp (small ones)
Nitrate free turkey bacon or proscuitto
1 Red pepper (chopped)
16 oz chicken broth
1 tsp sea salt
1 tbl. Organic butter
1 tbl fresh minced garlic
1/2 Onion chopped
1/4 cup parsley
First, slice all the corn off the ears and set aside 1/4 of it for the end.
Place butter in a frying pan and fry up garlic and onion on medium heat.
Dice half the onion, then add the onion and corn to pan and sauté a bit.
Add broth to blender/vitamix plus mixture from pan. Blend really well until liquid and add back to pan.
Fry up turkey bacon and cut in little pieces.
Sauté shrimp in pan as well till done.
Chop bell pepper in little pieces.
Add chopped parsley
Put all ingredients in pan and bring to boil, then simmer to thicken.
*If you like it thicker, organic corn starch will do the trick!
This soup is a meal in itself. All the flavors blend nicely, its even better the next day! Very tasty, nice with some homemade cornbread!
