INGREDIENTS
¼ cup organic grass-fed butter (melted)
¼ cup coconut palm sugar
2 tbsp. honey
1 large egg (room temperature)
2 tsp. vanilla
1½ cups blanched almond flour
2 tbsp. coconut flour
½ tsp. baking soda
½ tsp. sea salt
¼ cup dark chocolate pieces (just chop up a dark chocolate bar)
¼ cup Enjoy life chocolate chips
DIRECTIONS
Preheat oven to 325 degrees F. Whisk all ingredients in large bowl, then fold in chocolate chunks. Very lightly spray an 8-inch cast iron skillet with coconut oil, then pour batter into the base. Spread out evenly using a silicone spatula. Place the enjoy chips over the top, sprinkle sea salt, then place in the oven for 19 minutes on the center rack. Then turn to broil and cook 1-2 additional minutes **keep a close eye on it because it can burn quickly!
SORBET
3 cups frozen organic strawberries
1/4 cup almond milk
1/4 cup raw honey, or less depending how much sweetness you want
DIRECTIONS
Place strawberries, honey and milk in vitamix and blend on high speed until creamy.
Place in container and freeze or serve right away.
