(Makes 10 muffins)
Olive oil
1 red bell pepper
3-4 Mushrooms diced
2-3 handfuls fresh spinach
Small onion diced
1 cup of raw cheese (Trader Joe’s) optional
8 whole eggs
Diced turkey bacon, 1/2 cup
Salt and Pepper to taste
Cayenne pepper if you like spice
(all of these are options to put in the muffin) Choose your favorite!

Preheat oven to 350.
Prepare muffin tin with liners, or spray muffin tin with olive or coconut oil.
Fry up turkey bacon first and cut into pieces when cooked. Then, heat oil over medium heat and sauté mushrooms, spinach, onion, and pepper for about 5 min. Season with salt and pepper and cayenne to taste. Spoon in sautéd vegetables and turkey bacon into individual slot. In a separate bowl, whisk together the eggs and season again if needed.
Pour egg on top of veggies, being careful to not put too much so it doesn’t over flow. Evenly sprinkle cheese on top and bake for 20-25 minutes at 350 until eggs are completely set. Keep an eye on it as all ovens are different. Let cool and serve!
I love making these! There are so many different varieties and versions, something for everyone. The best part is that my kids love them too! They enjoy helping make them, and of course, enjoy eating their creations!
