INGREDIENTS (serves 4)
FOR BATTER
2/3 cup almond flour
1/2 tsp. baking powder
1/4 tsp ground cinnamon
1/4 tsp. salt
5 organic eggs
4 T milk (I used coconut milk)
2 T butter melted
2 tsp. vanilla
FOR THE APPLES
Slice 1 large apple in pieces
1/4 cup maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
4 T butter
DIRECTIONS
Preheat ovent 425 degrees. Place all ingredients in mixer (set aside )Then slice apples and place in small cast iron pan on low heat. Add butter, maple syrup and sprinkle cinnamon/nutmeg on apples and let simmer for a couple minutes..Add Batter on top and bake for 15-20 min.
Cool and serve! Add more maple and butter if you like on top!
I have a glass cooktop so I don’t use my cast iron on it. Instead of precooking the apples on top of the stove, I’m thinking about just doing them in the preheating oven?? Your thoughts on that idea?
Sure! Give it a try! Might need to cook a bit longer.
This reminded me of baked french toast which I love! It’s great to have a healthier option and it was a nice change to our normal breakfast routine.
