INGREDIENTS (SERVES 6-8)
21/2 lbs Grass fed beef
1 red onion diced
4 garlic cloves minced
5 mushrooms diced
2 tbl. oregano
2 tbl. basil
1/2 tsp. cayenne pepper (optional)
Sea salt to taste
6 cups diced tomatos
6-9 oz of tomato paste to liking
6-8 zucchinis thinly sliced
1-2 cups raw cheese
DIRECTIONS
Preheat oven to 350 degrees. In a large pan, sauté onions and garlic till lightly brown, add mushrooms, and spices to sauté as well. In a separate pan, brown grass fed beef. Mix in diced tomatoes and paste to beef mixture. Add the onion, mushroom and garlic to the mixture In a greased 9×13 baking dish. Place a layer of the thinly sliced zucchini on the bottom of pan. Ladle on a thick layer of the meat mixture. Top meat with another layer of zucchini and top the final layer with meat again. Add shredded cheese. Cover tightly with aluminum foil..( I used parchment paper on top first to protect it.) Bake for 30 minutes, uncover and bake another 15 minutes till hot all the way through.
