INGREDIENTS

4 Small Zucchinis

Sesame Seeds

Pine nuts

Garlic salt

Organic cherry or grape tomatoes, optional

To make Pesto- (also recipe on site)

2 cups packed fresh organic basil leaves

2 cloves garlic

1/4 cup pine nuts

2/3 cup extra-virgin olive oil

Sea Salt and freshly ground black pepper, to taste

Add extra garlic salt for more flavor if you want

1/2 cup freshly grated Raw parmesan cheese 

DIRECTIONS

Use a julienne peeler or mandoline to slice the zucchini into noodles. Set aside

Combine the basil and garlic in a food processor (I use my vitamix) and pulse until coarsely chopped.  Add olive oil in a constant stream while proccesor is on.  Stop the machine and scrape down the sides of the food processor with a rubber spatula. Add the lemon juice and Parm. Pulse one more time. Season with garlic salt.

Combine the noodles and pesto.  Mix in pine nuts and tomatoes and sesames seeds if desired.

Heat in a pan over med heat, stir and serve!
