One Whole Organic Chicken

Blood orange infused Olive oil (you can use regular)

6 tbsp. Organic butter


Balsamic Fig vinegar

Sea Salt


3 cloves minced

Organic Carrots

Organic Sweet potatoes sliced

Organic Chicken Broth


Preheat oven to 400 degrees. Wash and pat dry chicken after you remove goblets.

Mix butter with garlic, thyme and paprika and parsley and sea salt.  Spread all over the chicken. Keep a little extra to put inside the cavity of the chicken for flavor and moisture.  Pour olive oil and balsamic fig over the chicken lightly for flavor.  

Add more seasoning if needed and stick in a large pan.  Slice sweet potatoes and carrots and  saute them in olive oil and sea salt and spread in pan around the chicken during the last half an hour of cooking.  Add about a cup or so of chicken broth in pan.  Bake an hour and half depending on how big the chicken is..make sure its not over cooked. I cover it with tin-foil for the first hour then uncover till done.  To crisp on edges, broil for 3-5 min.
