2 cups quinoa

3 cups water

1 teaspoon sea salt

1/2 bunch cilantro

micro greens

1 cup cherry tomatoes, halved

Handful of pine nuts

1/2 cup crumbled feta

2 celery cut in pieces

3/4 cup craisins

1 bell pepper

Organic chicken cut up

(all the veggies are optional) more the better!


1/4 cup lime juice

1/4 cup olive oil

1 tsp. Dijon mustard

2 garlic cloves

Pinch of salt


Make Quinoa according to directions on box of quinoa in rice maker or other. 
Cut up all veggies and chicken and put in pan and mix with dressing…heat all ingredients till warm. Add feta and toast pine nuts and put on top. Serve warm or cold! Yummy!
