INGREDIENTS
1 Bag Raw mixed nuts from Trader Joe’s. I get the one with raisins in it.
OR 2 cups raw almonds, 1 1/4 raw pecans, 1/2 cup coconut flakes
Dried Craisins
½ cup honey
2 tablespoons coconut oil melted
1 tablespoon vanilla extract
1 tablespoon ground cinnamon
¾ tsp ground nutmeg
½ teaspoon sea salt
DIRECTIONS
Soak nuts overnight with 1 tsp sea salt. Change water one time. Drain water and absorb nuts with a paper towel till dry. Place nuts in a food processor or Vitamix and slowly chop till oat size. Not too much, you want it to look like granola. Stir in honey, coconut oil, vanilla, ground cinnamon, nutmeg and sea salt. Then place nuts spread out on a cookie sheet with foil or parchment paper. Bake at 325 for 20 minutes, give granola a stir here and there to make sure it doesn’t burn. Cool and serve as cereal or snack! I like it with almond milk and stevia drops.
Love this grain free granola! Love to eat it with almond milk in a bowl or pour it over yogurt. 🙂
