1 Tbsp. vanilla extract
3/4 cup organic coconut Milk
1/3 cup raw honey (add more for desired sweetness)
2 Tbsp. melted organic butter
Zest of 2 medium lemons
2/3 cup craisins
3/4 cup coconut flour
1/2 tsp. baking powder
1/2 tsp. salt
Heat oven to 375 degrees. Line an 8x8x2 inch glass baking dish with parchment paper… trim excess paper.
Whisk eggs first in blender then add vanilla, coconut milk, honey, melted butter, lemon zest and craisins. Blend well, then add dry ingredients.
Let sit for 5 minutes and pour in pan. Bake 30-40 minutes, check to see when fork is clean. Enjoy!
