INGREDIENTS
4 cloves garlic
1/3 cup Brazil nuts (selenium)
1/3 cup sunflower seeds (cysteine)
1/3 cup pumpkin seeds (zinc, magnesium)
2 cups packed fresh cilantro (vitamin A)
4 tablespoons lemon juice (vitamin C)
2 tbsp organic extra virgin olive oil
2/3 cup flaxseed oil or Avocado oil
Sea salt to taste
DIRECTIONS
Add all ingredients to your Vita-mix or food processor.. Then add oil and sea salt as desired, I think more is better with this pesto. Blend well. Store in the fridge. Add to spaghetti squash, pizza crusts, pastas or whatever sounds good!
Yuuuummm!! I made this tonight and baked it in the oven over some chicken breast and melted raw cheese on top. My whole family loved it- even the non loving cilantro lovers & my 3 year old so. I will be sure to make this a regular in our house from now on.
