INGREDIENTS

Organic Cauliflower Rice (I used 2 bags of it)

2-3 tbsps. olive oil

Garlic salt..any seasoning you like

Green beans (any veggie will do)

3 cloves garlic chopped up

Cherry Tomatoes

Pines Nuts 

2 Organic Chicken Breast shredded

DIRECTIONS

Pour 1-2 tbsp. olive oil in cast iron pan. Sauté cauliflower crumbles, add garlic salt and pesto. Sauté for 1-2 minutes until soft rice. Add veggies and chicken. Top with tomatoes and pine nuts.  Add extra sauce on top if desired.

**If you can’t find the rice, you can take a head of Cauliflower and cut it up and place in food processor to make crumbles.
